Persian Beef Patties (Cutlet) Recipe – Kotlet
Cutlet is one of the tastiest Persian meals, that you can cook and refrigrate for days. It can be served hot or cold, both ways I guarantee that it tastes great.
The only hard part may be frying which takes time, but once the heavenly smell of Cutlet spread all over your kitchen you’ll forget about everything except Cutlets.
BTW I recommend to taste one hot patty right after you fried it.

Ingredients
- 400 g ground beef or veal
- 5 big potatoes grated
- 1 big onion finely grated
- 1 egg optional
- ½ teaspoon turmeric
- Salt and pepper to your taste
- 1 tbsp dried basil
- Vegetable oil for frying

Instructions
- In a large bowl mix ground beef, onion, potato, crack egg, add all the spices such as turmeric, salt and grind some black pepper and dried basil. Mix well by hand or using a spoon.
- Take a handful of the mixture (size of a tangerine), flatten into an oval or a round shape.
- Heat some vegetable oil in a large frying pan over medium heat. Once you made sure the oil is hot, fry the patties until they become brown on both sides.
Recipe Notes
You can serve Kotlets warm or cold, with bread specially sangak or Barbari. Kotlet taste great with different kind of sides such as tomatoes, French fries, pickles, olives, fresh herbs and doogh ( yogurt drink).
