  1. Wash the rice thoroughly and soak in water, add salt and set aside for a couple of hours.
  2. In a large pot, add 2 tablespoon of oil and saute onions over medium heat until golden.
  3. Add the meat to the pan and cook until it's browned. Then add turmeric, ground pepper and stir well.
  4. Add tomato paste, fry for a minute then pour tomato puree. Mix thoroughly.
  5. In another pan add 1 tbsp of oil over a medium heat and add chopped green beans. Fry for 5 minutes until become soft.
  6. Then add green beans to the meat pot. Pour 2 cups of warm water and let it cook for 1 hour. At the end of cooking time add salt, lemon juice, rice spice and 2 tbsp of saffron to the meat.
  7. In another pot, bring water to boil. Drain rice and pour into the boiling water. Wait for the water to boil again, this may take about 6-8 minutes on medium-high heat, we want the rice to be soft on the outside and firm in the center. Test to see if the rice is ready. Then drain rice and rinse with cool water.
  8. Wash your pot and add oil to it. You can place bread or sliced potatoes as Tah-dig, then add a layer of rice and the mixture of meat and green bean sauce, continue doing this until using all the rice. Cover the lid with a kitchen towel to prevent the moisture from building up in the pot. Reduce heat to low and cook for 45 minutes to an hour.

Serve this delicious food with Shirazi Salad & dooq.
And I recommend potato as Tah-Dig 😉
