Pan Fried Kebab (Kebab Deegi) Recipe

Ingredients
- 400 gr ground meat
- 1 medium-sized onion grated discard juice
- tsp ½ teaspoon ½turmeric, ½paprika, ½sumac
- 1 tablespoon salt
- teaspoon ¼ground pepper
- Brewed saffron to your taste
- 2 tablespoon vegetable oil
- For sauce:
- 1 tbsp freshly squeezed lemon juice
- 3 medium sized tomatoes
- 1 tbsp tomato paste
- 1 garlic clove
- 1 green pepper
- 1 tsp salt

Instructions
- In a mixing bowl combine ground meat, grated onion, spices and saffron and mix very well.
- Flatten the mixture into a pan, cut the meat lengthwise into strips and add some oil.
- Place the pan on the stove on medium heat. Once one side is brown, turn them over one by one and cook for another 20-30 on medium-low heat or until meat is fully cooked.
- For Sauce:
- Place a small pan on the medium heat. Pour some oil and add tomato paste. Fry until it changes color.
- Cut garlic into small pieces and add into the pan.
- You can cut tomatoes into small cubes or grate them, then add to the pan.
- Sprinkle salt and add green pepper & lemon juice.
- Mix until it becomes thick, then pour sauce on kebab
Recipe Notes
Serve with saffron rice, sumac, fresh herbs and kefir drink (doogh).
